Is it worth it to learn to create your own Forms, when there are so many form-builder plugins out there?

Definitely. I'd always recommend learning how anything works before using a framework or plugin, it will give you a better understanding of things in the long run.

When building things now I always like to know what I am using and how it works, that means you can remove any bloat that you don't need and I feel it is just better going forward.

You might not need to learn the php that actually sends the email but I would definitely learn the html/css/javascript sed to create the form on the front end.
