Why do a page refresh?

I have enjoyed all the courses on javascript, node, and express. I have fallen in love with the language. But there is something I still don't understand. With the power of node why do we need to refresh the page in order to update text in a label. Why not just put an EventListener on the button with a callback? Is it necessary to have routes at all when you can dynamically create login, and signup pages with node?
