When i click data validation, rules come up and it changes my existing data. It doesn't look like the video at all.

I've just followed along with the video on my end and in the current version of Sheets things indeed look a little different. Instead of a modal opening you'll see a side panel open up on the right. If you choose Add Rule the side panel should give you the same inputs as shown in the video. Also you'll see a live preview on the sheet of what the validation is doing now instead of having to Save as shown in the video.
If you just ignore the live preview changes and follow along with the steps you should end up with the same result as Richard is showing 🙂 The only two things that have been reworded a little are the Criteria, instead of the 2 dropdowns for Name and Between you'll have a single Is Between. And the Criteria later on in the video is now called Dropdown (from a range) instead of List from a range.
