Ok, so now that I have a WordPress Child theme (this may be a stupid question - but better safe than sorry!). Is it safe to update the Child theme's WordPress/plugins ? Or should I only update the Parent theme?

32,861 PointsYou only have to worry about updating the Parent theme. The child theme is only updated by you making changes to it. Plugin and WordPress core updates are independent of your themes and for the most part you will be able to update those with no problems. You can run into problems if you update WordPress core or plugins and your Parent theme is not updated to support the new versions so you should always make backups that you can revert to before processing updates of any kind.
