SO if we want to edit the style of a template/theme we just create /child/ file and edit css within this?

First thing to check is whether the theme options have a place where you can enter your own CSS.

You can edit style.css directly in the theme if that's the only thing you are editing and you are ok with messing with the main theme.

If you are editing the child theme, look for style.css in the child theme.
