So is it acceptable to use my personality trait in all of my UX projects? if yes, what if my personality trait leans more to the left and I'm working on something more serious and professional like a law enforcing app.

I think thy mean rather the personality of the website you're designing, rather than your own personality. If you're designing your personal project, you can use your own, but if you're designing one for a client, it should reflect the personality of their brand.
