I am looking at the WP documentation as I'm learning this and many of these functions are outdated. Why hasn't this been updated?
I feel kind of ripped off that I'm following the Wordpress tract, but I'm being taught outdated material. I'm questioning my subscription.
You guys don't list the creation date like Lynda, which seems like your trying to hide the outdatedness.
Please Advise.

You are correct that a lot of this is outdated now. However, it still has its uses and most of it still applies with some modifications and personally have found it more helpful having to figure some of it out than it just working by copying some code.
As well, I tend to look at the questions others have posted to get an idea of how old a given video/topic is.
