I don't quite understand the ebenfits of hard-coding the URLs into the config.php file. I understand that in the general settings we can achieve this (or something similar).
What exactly are the benefits of doing it here, especially with regards to a staging site and a live site?

When using a staging/production environment you can set it up so that both URLs are present and depending on what the domain is depends on which information is being used. This makes it so you only have to set it all up once if you have some type of standard for staging vs production.
