Spreadsheet settings...
Calculation tab
and then in the "Recalculation" drop-down box and choose one of the settings that includes an interval.
If you mean updates of a reference to an external sheet, I found this blog post and this other one that may be helpful.

I understand I'm late to this thread, but I also would like to see material covering the use of writing data to a spreadsheet from a web page, reading data from the spreadsheet, editing existing spreadsheet data, deleting data, etc...
This is what I, and most other users I expect, were hoping to learn here. There are hundreds of Youtube videos that explain the basic functionality of spreadsheets. Google themselves have 5 minute quick start tutorial video explaining everything in this course. .
I love you guys, but please update with some more in depth courses on this topic.
