How do I create a PDF of my portfolio in Sketch?

I'm trying to build my portfolio as a PDF in Sketch. I'm stuck on how to format the canvas for this task. Should I create an artboard with dimensions corresponding with 8.5 x 11 inch piece of paper for every single page of my portfolio? I want this document to look normal sized when somebody opens it up on their computer -- not super big or small.

When I go to export, how would I be able to export every artboard?

I'm not totally clear on what artboards do or pages do.

Artboard are mainly associated with mirroring the work on iOS device. If you are looking for portfolio in work you should get started with new from template and choose a web design. This would open up common portfolio areas like desktop, hd desktop, mobile etc. Choose the one you like to design on. And after all the work click on the area name and choose pdf while exporting the regular way.
