At 1:10, does the name/format of name for the database matter and what collation should we use?

I'm just curious if there's any specific database name formatting that I should follow or things within the name that I should avoid and 2 what collation I should follow. Zac left it as Collation, but another time I created a databased I used UTF-8. I'm planning on creating a real estate website in Phoenix, AZ, USA for that matter, potentially expanding Nationally if that matters.
